Connie Lea Pollock, 56, of Outing, MN, passed away in her home on Wednesday, August 13, 2025.

Connie was born in Minneapolis, Minnesota, to Charles and Dlaine Hurt. She spent part of her youth in California, where she attended Palmdale High School.

A devoted and resilient mother, Connie raised her three children—Cassandra, Timothy, and Steven—on her own for many years. In 2012, she married Jack Pollock in a Las Vegas ceremony on February 29--a leap day that perfectly reflected their fun-loving spirit. Together, they built a life in Outing, MN, where Connie continued to pour her heart into her family, work, and community.

After many years in the food industry as a bartender and waitress, Connie chose to pursue a new path in healthcare. She earned her Medical Assistant certificate from Ridgewater College in Willmar, MN, in December 2004. Connie went on to work in several clinic settings, ultimately finding her greatest fulfillment at Riverwood Healthcare Center, where she worked in the Oncology Department. There, she built strong, lasting relationships with both coworkers and patients—a testament to her natural compassion and gift for caregiving.

Connie later became a certified EMT and served with pride as a Crooked Lake First Responder, eventually stepping into the role of Chief. Her commitment to helping others extended beyond her profession; she was actively involved in local fundraisers and community events.

She had a love for adventure and the outdoors, often organizing side-by-side ATV trips with friends. A strong advocate for ATV safety, Connie was known for reminding everyone to wear bright colors and for making sure kids wore their helmets. Just a week before her passing, she was able to enjoy an Alaskan cruise—one of many travels she cherished.

Connie also had a deep appreciation for nature--especially hummingbirds and flowers, which brought her joy and comfort. She found happiness in life’s small, beautiful moments—watching the birds outside her window or preparing for the holidays. Christmas was her favorite time of year, and she took great pride in bringing the family together, filling her home with love, laughter, and her signature holiday meals and games.

She also had a fun-loving spirit and never passed up the chance to play the slots at the casino, scratch off a lottery ticket, or try her luck with pull-tabs. She loved the excitement of a good meat raffle or horse race and always managed to bring joy and laughter to those moments. Whether she was planning a side-by-side ride or picking her favorite numbers, Connie knew how to enjoy life’s simple pleasures and share them with those around her.

Above all, Connie’s deepest joy came from her family. She loved her children and grandchildren fiercely and was endlessly proud of them.

Connie’s life was marked by love, strength, and a quiet but steady faith. Though the circumstances of her passing are heartbreaking, we hold to the belief that even in the midst of tragedy, God’s plan is greater than our understanding. As Scripture reminds us: “Trust in the Lord with all your heart and lean not on your own understanding; in all your ways submit to him, and he will make your paths straight.” — Proverbs 3:5–6

In her memory, we also hold onto the power of compassion and forgiveness, not because it’s easy, but because it’s what she would have wanted. “Be kind and compassionate to one another, forgiving each other, just as in Christ God forgave you.” — Ephesians 4:32

Connie is survived by her children: Cassandra (Jerrick) Ruschen of Raymond, MN; Tim (Lisa) Johnson of Litchfield, MN; and Steven (Mandi) Hanson of Litchfield, MN; and by her beloved grandchildren: Thatcher, Callum, Porter, Brooke, and Hawkyn. She is also survived by her brother, Richard (Debbie) Hurt of Clear Lake, MN; nieces and nephews: Jena Hannon (Ryan), Jordan Hurt, Kara (Isaac) Kotila, Danny Kampa, and DJ Kampa; her aunt Marce (Harold) Johnson; uncle Adair (Lisa) Rosenow; and many cousins.

She was preceded in death by her parents, Charles and Dlaine Hurt; her stepfather, Gregg Ennis; and her brother, Timothy Hurt.

A memorial service will be held at Brenny Funeral Home at 11am Friday, August 29, 2025 at the Brenny Family Funeral Chapel with a visitation one hour prior.
